This wine was produced using the traditional saignée method of draining off juice from our Pinot Noir ferments in the early stages of cold soaking. With only 12-hours of skin contact, the juice was then transferred to stainless steel vats and older French oak barrels where it went through partial indigenous fermentation and remained on its lees for four months before being bottled. The wine went through a natural malolactic fermentation.
