From a selection of early pressings, the must was fermented cool and long in stainless before transferring to French oak (22 percent new) where it remained on lees for 11 months, sans battonage and with MLF. Tight lemon drives though stone, lees, meadow herbs, ripe pear and fine spice, drawing the palate long to the lingering finish.
